Turmeric Lemon Rice

Turmeric Lemon Rice is a vibrant and flavorful dish that combines aromatic basmati rice with the earthy notes of turmeric and the refreshing zing of lemon. This simple yet delicious recipe is not only easy to prepare but also packed with health benefits, making it an excellent choice for a quick lunch or dinner.

Ingredients:
For the Rice:
- 60 grams uncooked basmati rice
- 1 teaspoon turmeric powder
- 1 tablespoon lemon juice
- 200 ml water
- 1 teaspoon ghee
- Salt to taste
For Tempering:
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 dried red chili, broken into pieces
- 1/2 teaspoon asafoetida (hing)
- 2 tablespoons finely chopped fresh coriander leaves
- 1 green chili, finely chopped
- 20 grams finely chopped onion
- 20 grams finely chopped carrot (optional)
Procedure:
- Rinse the basmati rice under running water until the water runs clear. Soak it for about 30 minutes, then drain.
- In a pot, bring 200 ml of water to a boil. Add the soaked rice, turmeric powder, and salt. Stir gently and cover the pot.
- Cook on low heat for about 15-20 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.
- In a skillet, heat ghee over medium heat. Add mustard seeds and cumin seeds, and allow them to splutter.
- Add the broken dried red chili, asafoetida, and chopped onions. Sauté until the onions become translucent.
- Add the chopped green chili and carrot, and sauté for an additional 2-3 minutes.
- Fluff the cooked rice gently with a fork and add it to the skillet with the tempered spices. Pour in the lemon juice and mix well to combine all the flavors. Adjust salt if needed.
- Garnish with finely chopped coriander leaves and serve hot with a side of yogurt or a fresh salad.
