Turmeric Lemon rice

This traditional recipe of turmeric lemon rice is very easy to prepare and has refreshing flavours. It’s a great alternative to the plain rice that spices up the recipe and brings in great flavours without any hustle bustle.

Turmeric has anti-inflammatory properties and is used to cure a cold and cough. Lemon is rich in vitamin C that boosts immunity and helps in blood pressure. The turmeric flavoured rice with a hint of lemon brings in a great taste and provides various health benefits.
Ingredients:
- 50 grams cooked rice
- 1 teaspoon oil
- ½ teaspoon mustard seed
- 1-2 curry leaves
- 1 teaspoon turmeric
- 5 grams toasted peanuts
- ½ teaspoon red chilli
- 1 tablespoon chopped coriander
- 1 teaspoon lemon juice

Method:
- Start by heating some oil in a skillet and add in mustard seeds to pop for a minute.
- Then add in curry leaves, turmeric, and red pepper flakes and reduce the heat for 1 minute more.
- Add in the toasted peanuts and lemon juice and stir it up.
- Mix in some rice and salt as per taste and cook for 2-3 minutes
- Garnish with chopped coriander and serve with veggies of choice.
