Ingredients:
- 100 grams cooked quinoa
- 100 grams cooked chickpeas
- 50 grams chopped kale
- 50 grams diced cucumber
- 50 grams diced bell pepper (any color)
- 50 grams shredded carrots
- 30 grams halved cherry tomatoes
- 20 grams pumpkin seeds (raw)
- 1 tablespoon extra virgin olive oil
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Procedure:
- In a large mixing bowl, combine the cooked quinoa and chickpeas.
