No Bake Mini Santa Bites

No bake Mini Santa bites are packed with a bundle of nutrients which are essential for your body. These cookies are perfect for Christmas celebration.

The main ingredient of this recipe is oats, which are rich in carbohydrate and fiber content thereby helping in better digestion and keeps you full for a longer period of time. Strawberries are rich in antioxidants and vitamin c content. Flax seeds are rich in dietary fiber and omega -3 which are said to lower blood pressure, improve cholesterol and also promote better digestion.
Ingredients –
- 20 grams of rolled oats
- 10 grams strawberry
- 1 teaspoon ground flax seeds
- 2 date
- 1/4th teaspoon cinnamon powder
- 10 grams unsalted butter
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 1 teaspoon coconut oil

Method –
- Take a pan and dry roast the oats over low heat until just browned around the edges for about 1 to 2 minutes and remove from the heat and set aside.
- Meanwhile in another bowl, combine the flaxseed with warm water and set aside to thicken for about 5 minutes.
- Then add butter, dates, coconut oil, vanilla extract, cinnamon powder and salt into the blender and blend.
- Then add the flaxseed mixture and blend until smooth.
- Then add the oats and mix well.
- Meanwhile, pure the strawberries and keep aside.
- Divide the cookie batter to 2 parts and add strawberry puree to one amongst those.
- Make a mini santa face with the first part of batter and a santa hat with strawberry batter with the help of a cookie cutter.
- Chill until firm for at least 30 minutes.
- Then store in an air-tight container and relish them.
