  • 1 Small head of Cauliflower, divided into 1-inch florets
  • 2 Tsp. Olive Oil
  • 1 Small Onion, finely diced
  • 1 Tsp. Lemon Juice
  • 2 Tbsp. Fresh Parsley leaves
  • Salt as per taste


  • Put the cauliflower florets into the food processor and pulse it, until it turns to broken rice form.
  • Heat a pan, add oil, and onion and stir until they turn golden brown. Add cauliflower and stir to combine. Add salt and keep stirring until it softens.
  • Transfer the cauliflower rice into a serving bowl and garnish it with parsley and lemon juice.
