Ingredients
- 1 Small head of Cauliflower, divided into 1-inch florets
- 2 Tsp. Olive Oil
- 1 Small Onion, finely diced
- 1 Tsp. Lemon Juice
- 2 Tbsp. Fresh Parsley leaves
- Salt as per taste
Method
- Put the cauliflower florets into the food processor and pulse it, until it turns to broken rice form.
- Heat a pan, add oil, and onion and stir until they turn golden brown. Add cauliflower and stir to combine. Add salt and keep stirring until it softens.
- Transfer the cauliflower rice into a serving bowl and garnish it with parsley and lemon juice.
