One Pot Veg Thai Curry

One Pot Veg Thai Curry is a special curry made with blend of vegetables especially prepared using coconut milk. It gives you a perfect tinge of creamy and spicy flavour altogether.

Coconut milk is linked with boosting up immune system because of the presence of lauric acid that has anti-inflammatory and anti-microbial properties. Carrot is rich source of Vitamin A and fibre. Its consumption is linked to improved vision and decreased cholesterol levels.

  • 3-4 Garlic cloves
  • 10 ml Coconut milk
  • 20 grams onion
  • 20 grams bell peppers
  • 20 grams tomatoes
  • 10 grams beans
  • 10 grams peas
  • 10 grams rice
  • 1 teaspoon red curry paste
  • ½ teaspoon grated ginger
  • 1 teaspoon lemon juice
  • ½ teaspoon vinegar
  • 1 cup vegetable broth
  • 1 teaspoon coconut oil


  • Heat oil in a pan and add ginger, garlic and onion. Sautee for 1-2 minutes. Then add other vegetables like carrot, beans, tomato and bell peppers.
  • Let all the vegetables cook until they become tender over a medium flame.
  • Now add rice to this mixture along with coconut milk, red curry paste, vinegar and vegetable broth.
  • Bring this to boil and over medium/high flame.
  • Wait until the rice are cooked. Once cooked, serve hot.
