Creamy Rainbow Sandwich
  • This vibrant and delicious sandwich is a delightful combination of flavours and textures.
  • Layered with creamy feta cheese, crisp cucumber, juicy tomato, and colorful bell peppers, it’s garnished with lemon zest and parsley for a fresh touch.

For a Serving Size of Two:

Ingredients:

  • 4 multigrain or sourdough bread slices
  • 80 grams greek yoghurt
  • 40 grams feta cheese
  • 1 teaspoon lemon zest
  • 30 grams sliced cucumber
  • 30 grams sliced tomato
  • 30 grams sliced coloured bell – peppers
  • 2-3 lettuce leaves
  • 1 tablespoon pomegranate seeds 
  • Salt to taste
  • Freshly ground black pepper to taste
  • Chopped parsley for garnishing
  • 1 teaspoon olive oil

Procedure:

  • In a bowl combine greek yoghurt, cashew cheese, lemon zest, pomegranate seeds and parsley, then add freshly ground pepper, salt and mix well. Refrigerate for 30-45 mins.
  • Toast the bread slices well on a pan using olive oil.
  • Spread the above-prepared mixture on both bread slices, then assemble the sliced vegetables (cucumber, tomato, bell- peppers and lettuce leaves) on one bread slice and cover it with the other piece to make a sandwich.
  • Serve immediately.
