Creamy Beetroot Soup

A warm bowl of soup can be as comforting as it is nutritious. This fresh beetroot soup is a vibrantly-coloured soup with unique flavour and creamy texture giving various health benefits.
Nutritional benefits
Beetroots are rich in iron, folic acid, vitamin A and vitamin C. It helps in building up of immunity because of its antioxidant properties. Coconut is rich in potassium and antioxidant levels
Ingredients
- 20 grams beetroot
- 20 grams onion
- 1-2 green chilies
- Ginger garlic paste
- 1 Teaspoon of red chili powder
- 1 Teaspoon of coriander powder
- 1 sprig of curry leaves
- 10ml of coconut milk
- Salt and pepper as per taste
- Fresh coriander for garnishing
- 5 grams oil

Method
- Take a saucepan, heat some oil, then add cumin seeds, curry leaves, ginger- garlic paste, green chilies and onion.
- Wait for the onions to turn translucent and add all the spices.
- Then add chopped beetroot into it and simmer on low flame until the beetroots are soft.
- Blend this beetroot mixture to form a smooth paste and transfer it to the saucepan.
- Add coconut milk and water to adjust consistency and bring it to boil.
- Serve hot.
