Creamy Beetroot Soup

A warm bowl of soup can be as comforting as it is nutritious. This fresh beetroot soup is a vibrantly-coloured soup with unique flavour and creamy texture giving various health benefits.

Nutritional benefits
Beetroots are rich in iron, folic acid, vitamin A and vitamin C. It helps in building up of immunity because of its antioxidant properties. Coconut is rich in potassium and antioxidant levels

Ingredients

  • 20 grams beetroot
  • 20 grams onion
  • 1-2 green chilies
  • Ginger garlic paste
  • 1 Teaspoon of red chili powder
  • 1 Teaspoon of coriander powder
  • 1 sprig of curry leaves
  • 10ml of coconut milk
  • Salt and pepper as per taste
  • Fresh coriander for garnishing
  • 5 grams oil

Method

  • Take a saucepan, heat some oil, then add cumin seeds, curry leaves, ginger- garlic paste, green chilies and onion.
  • Wait for the onions to turn translucent and add all the spices.
  • Then add chopped beetroot into it and simmer on low flame until the beetroots are soft.
  • Blend this beetroot mixture to form a smooth paste and transfer it to the saucepan.
  • Add coconut milk and water to adjust consistency and bring it to boil.
  • Serve hot.
