Creamy Beetroot Soup

Creamy Beetroot Soup is a vibrant and nutritious soup that combines the earthiness of beetroot with the sweetness of carrots, creating a delightful balance of flavors. Ingredients:

  • 300 grams peeled and diced beetroot
  • 100 grams diced onion

  • 400 ml vegetable broth (or water)
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons coconut milk (for creaminess)
  • Salt, to taste
  • Fresh parsley (for garnish)

Procedure:

  • In a large pot, heat olive oil over medium heat. Add the diced onion, carrot, and garlic, and sauté for 5-6 minutes until the vegetables are softened and the onion is translucent.
  • Add the diced beetroot to the pot and cook for 3-4 minutes, stirring occasionally.
  • Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and simmer for about 15-20 minutes, or until the beetroots and carrots are tender.
  • Using an immersion blender or regular blender, blend the soup until smooth and creamy. If using a regular blender, allow the soup to cool slightly before blending, and then return the soup to the pot.
  • Stir in the coconut milk, ground cumin, nutmeg, black pepper, and salt. Bring the soup back to a gentle simmer and cook for an additional 5 minutes to allow the flavors to meld together.
  • Add fresh lemon juice and adjust seasoning if needed. Serve the soup hot, garnished with fresh parsley for a burst of color and flavor.
