White Bean and Broccoli Salad

White bean and broccoli salad is a colorful, hearty salad and a healthy side dish ideal for any season. Tossed with vegetables and chickpeas, it provides you with ample fiber, protein and other health benefits too.

Nutritional Benefits:

Chickpeas are energy dense, have good amounts of fibre and improve digestion. Apart from this they are also a very great source of calcium and protein. Broccoli is a low calorie which is high in fibre and thus can aid proper digestion. Essential vitamins and minerals like B vitamins, folate, Vitamin C is also present in them.

Ingredients:

  • 15 grams chickpeas rinsed and boiled
  • 20 grams bell peppers
  • 20 grams carrot
  • 20 grams spring onion
  • 20 grams broccoli
  • ¼ teaspoon vinegar
  • ¼ teaspoon thyme
  • ¼ teaspoon oregano
  • ¼ teaspoon chilli flakes
  • 5 grams olive oil

Method:

  • Firstly, preheat the oven to 400-degree F. Place the chopped vegetables on the baking sheet and drizzle with olive oil. Allow to bake for 20 -30 minutes until vegetables turn golden brown.
  • Next, take out the roasted vegetables and transfer the vegetables to a bowl and then add boiled chickpeas in it.
  • Make a mixture of vinegar, oregano, chili flakes, thyme and toss it on the salad.
  • Your white bean broccoli salad. Serve and enjoy.
