White Bean and Broccoli Salad

White bean and broccoli salad is a colorful, hearty salad and a healthy side dish ideal for any season. Tossed with vegetables and chickpeas, it provides you with ample fiber, protein and other health benefits too.
Nutritional Benefits:
Chickpeas are energy dense, have good amounts of fibre and improve digestion. Apart from this they are also a very great source of calcium and protein. Broccoli is a low calorie which is high in fibre and thus can aid proper digestion. Essential vitamins and minerals like B vitamins, folate, Vitamin C is also present in them.
Ingredients:
- 15 grams chickpeas rinsed and boiled
- 20 grams bell peppers
- 20 grams carrot
- 20 grams spring onion
- 20 grams broccoli
- ¼ teaspoon vinegar
- ¼ teaspoon thyme
- ¼ teaspoon oregano
- ¼ teaspoon chilli flakes
- 5 grams olive oil

Method:
- Firstly, preheat the oven to 400-degree F. Place the chopped vegetables on the baking sheet and drizzle with olive oil. Allow to bake for 20 -30 minutes until vegetables turn golden brown.
- Next, take out the roasted vegetables and transfer the vegetables to a bowl and then add boiled chickpeas in it.
- Make a mixture of vinegar, oregano, chili flakes, thyme and toss it on the salad.
- Your white bean broccoli salad. Serve and enjoy.
