Gajar ki Kanji

Winters bring in the amazing carrots that are used for preparing all the favorite recipes. Kanji is a traditional fermented drink prepared in the northern region during the winters. It is prepared using very simple ingredients and helps in keeping the body warm. It is the perfect appetizer that has a sour taste and is extremely good for gut health.

Nutritional benefits:
Beetroot is high in fiber and contains inorganic nitrates and pigments that are good for athletic performance. They have anti-inflammatory activity that protects the body from inflammation. Black carrot on the other hand is very beneficial as they are rich in antioxidants and helps to reduce inflammation. They also improve heart health and help to lose weight. The fermentation process of kanji makes it very desirable for people suffering from gut issues as they aid digestion.

Ingredients:

  • 80 grams black carrot
  • 50 grams beetroot
  • 1-1.5 liter of water
  • ½ teaspoon red chili powder
  • ¼ teaspoon cumin seed powder
  • ½ teaspoon mustard powder
  • Black salt as per taste

Method:

  • Take medium-sized carrots and beetroot and wash them properly.
  • Chop them into medium-sized pieces.
  • Take a ceramic jar and mix all the ingredients.
  • Cover the jar with muslin cloth and allow it to ferment by keeping it in the sun for about 3-4 days.
  • Make sure to stir it with a wooden spoon every day.
  • Serve the kanji.
