Salsa Dipped Baked Eggs

Salsa dipped baked eggs are a super amazing option for the breakfast or evening snack. So, here is a recipe which is a perfect grab for you filled with ample health benefits.

Ingredients
- 20 grams cherry tomatoes
- 50 grams spinach
- 1/4th teaspoon cumin seeds
- 1-2 garlic cloves
- 1 small bunch of parsley
- 1 small bunch of basil
- ½ small bunch of mint, leaves picked
- 1 teaspoon white wine vinegar
- 2 eggs

- Firstly, heat oil in a pan and fry cumin seeds for 30 seconds over a medium heat. Then add tomatoes and simmer over a medium heat for 5-6 mins until tomatoes have softened.
- Then add garlic, basil, mint, vinegar and blend to form a smooth paste.
- Now add spinach in tomato mixture and divide into 2 portions. Now add the cracked eggs into these portions. Cover, and let it heat for 6-8 minutes.
- Garnish with remaining parsley and chili flakes. Serve hot.
