Chickpea Quinoa Salad

Summer is always filled with travel, food, and music. They are filled with exciting and best foods to eat and get over your cravings. It is the best time to make up some new recipes. So I thought to make a yummy quinoa salad. This salad is a refreshing summer meal to grab in this sunny weather and get nutritional benefits.
Nutritional benefits: – Quinoa is a complete protein containing all essential amino acids. It also helps in constipation and blood pressure as it has good fibre content. Chickpeas offer a variety of health benefits, such as improving digestion, reducing the risk of diseases, and helping in weight management. Carrots are rich in antioxidants. Therefore this salad is a package of nutrition and taste.
Ingredients: –
- • 20g cooked quinoa
- • 10 grams of red bell pepper
- • 10 grams chopped cucumber
- • 10 grams chopped tomatoes
- • 10 grams chopped carrot
- • 10 grams boiled chickpea
- • 10 grams chopped onion
- • 1 teaspoon olive oil
- • 1 teaspoon of lemon juice
- 5 grams parsley
- 2 garlic cloves
- • Freshly ground black pepper and salt

Protein: 2.7 grams
Carbohydrates: 13.4 grams
Fat: 3.8 grams
Method:-
- Start by roasting the red bell pepper over the flame; cover for 5-10 minutes and pee, and chop
- On the other side take a small bowl; add the olive oil, and lemon juice. Parsley, garlic, salt, and pepper to form the dressing.
- In a large bowl; toss the cooked quinoa along with veggies and chickpeas. Mix them well and add on the dressing and serve
