ZUCCHINI PANCAKES

Zucchini Fritters or Pancakes are the perfect way to enjoy the perfect vegetable, zucchini. Serve these veggie pancakes with marinara sauce or hung curd for a healthy appetizer or side dish!

NUTRITIONAL BENEFITS: Zucchini is packed with beneficial nutrients such including Vitamin C and A, potassium, folate and fibre. All these contribute to various health benefits. Eggs are amongst the healthiest and is a very good source of inexpensive, high quality protein. They are rich sources of selenium, vitamin D, B6, B12 and more.

INGREDIENTS:

  • 40 grams zucchini
  • 1 garlic clove, minced
  • 1 egg
  • 10 grams oats flour
  • 10 grams wheat flour
  • ½ teaspoon baking powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried basil
  • 5 grams parmesan cheese shredded
  • Salt and pepper to taste
  • 1 teaspoon olive oil

METHOD:

  • In a large bowl, grate zucchini using the large holes of a cheese grater and place in a large bowl
  • Then, add flour, onion powder, garlic, basil, egg, cheese, salt and pepper. Stir well to distribute ingredients evenly.
  • Heat a large skillet over medium heat and spray oil into the pan to coat.
  • Drop tablespoons of the batter into the skillet and cook for about 3-4 minutes on each side until golden brown.
  • Continue with remaining batter and enjoy them warm.
