ZUCCHINI PANCAKES

Zucchini Fritters or Pancakes are the perfect way to enjoy the perfect vegetable, zucchini. Serve these veggie pancakes with marinara sauce or hung curd for a healthy appetizer or side dish!

INGREDIENTS:
- 40 grams zucchini
- 1 garlic clove, minced
- 1 egg
- 10 grams oats flour
- 10 grams wheat flour
- ½ teaspoon baking powder
- ½ teaspoon onion powder
- ½ teaspoon dried basil
- 5 grams parmesan cheese shredded
- Salt and pepper to taste
- 1 teaspoon olive oil

METHOD:
- In a large bowl, grate zucchini using the large holes of a cheese grater and place in a large bowl
- Then, add flour, onion powder, garlic, basil, egg, cheese, salt and pepper. Stir well to distribute ingredients evenly.
- Heat a large skillet over medium heat and spray oil into the pan to coat.
- Drop tablespoons of the batter into the skillet and cook for about 3-4 minutes on each side until golden brown.
- Continue with remaining batter and enjoy them warm.
