Monster Wraps

Monster Wrap is a hearty and nutritious meal packed with colorful vegetables and protein, all wrapped in a wholesome tortilla. This versatile wrap can be enjoyed for lunch or dinner and can be customized to include your favorite fillings and spreads.

For a Serving Size of Two:

Ingredients:

  • 4 large whole wheat or spinach tortillas
  • 200 grams cooked chicken breast or chickpeas (for a vegan option), shredded or mashed
  • 100 grams spinach leaves, washed
  • 100 grams bell peppers, sliced
  • 100 grams cucumber, sliced
  • 50 grams shredded carrots
  • 100 grams avocado, sliced
  • 50 grams hummus or your favorite spread
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • Fresh herbs (parsley or cilantro) for garnish (optional)

Procedure:

  1. In a bowl, mix the shredded chicken or mashed chickpeas with lemon juice, olive oil, salt, and pepper. This adds flavor and moisture to the filling.
  2. Lightly warm the tortillas in a dry skillet or microwave for a few seconds until pliable.
  3. Lay each tortilla flat and spread a generous layer of hummus on each one.
  4. On one side of each tortilla, layer the spinach leaves, bell peppers, cucumber, shredded carrots, and avocado slices.
  5. Spoon the chicken or chickpea mixture over the vegetables.
  6. Starting from the side with the filling, tightly roll the tortilla away from you, tucking in the sides as you go to create a secure wrap.
  7. Cut the wraps in half diagonally and serve with fresh herbs if desired.
