Edamame and Chickpea Wraps

Edamame and chickpea wraps are filled with bold flavors and fresh ingredients and are a top healthy dish that tastes amazing. It can be served as an appetizer, main dish, or snack.

Nutritional benefits:

Chickpeas offer a variety of health benefits, such as improving digestion, reducing the risk of diseases, and helping in weight management. They are also high in protein. Edamame is good in protein and helps in lowering cholesterol. Cabbage on the other hand gives crunchiness to the wrap. It contains potassium, folate, and vitamin C that help in keeping the immune system healthy.

Ingredients:

  • 30 grams edamame beans
  • 20 grams boiled chickpeas
  • 1 small garlic clove
  • 1 teaspoon cumin
  • Handful of parsley
  • 1 teaspoon of wheat flour
  • ½ teaspoon of olive oil

To Serve

  • 10 grams of chopped red cabbage
  • ½ teaspoon of lemon
  • 1-2 flatbread or wrap
  • 1 tablespoon of hummus
  • 10 grams cubed cucumber, chopped
  • ½ teaspoon sliced red chili

Method:

  • Start by heating the oven to 190 degrees Celsius. Place some parchment paper on the baking tray.
  • Take a clean blender and add in all the ingredients mentioned, except the oil and the ingredients mentioned under to serve and season it lightly.
  • Blend them to obtain a smooth paste.
  • Next, oil the hands and scoop out some of the blended mixtures and roll them into balls, and line them on the baking tray.
  • Brush the prepared balls with some oil and bake them for about 20- 25 minutes or until they are golden in color.
  • Take a bowl and add in the chopped cabbage with some lemon juice and salt and keep aside to pickle.
  • Take a wrap and spread the hummus over it, top it with some pickled cabbage, falafel, cucumber, parsley, and chili.
  • Serve as it is or along with sauté vegetables.
