Nutty Oats Risotto offers a creamy, savory twist on traditional risotto by using oats as the base. For a Serving Size of Two:

Ingredients:

  • 60 grams oats
  • 30 grams onions, chopped
  • 60 grams mushrooms, thickly sliced
  • 10 grams almonds, chopped
  • 10 grams walnuts, chopped
  • 4-6 garlic cloves, minced
  • ½ teaspoon freshly ground pepper
  • 1.5 tablespoons lemon juice
  • 4 cups vegetable broth (mixed with 4 cups of hot water)
  • 1.5 teaspoons extra-virgin olive oil

Procedure: 

  • Heat the olive oil in a pan over medium heat.
  • Add the chopped onions and cook until they become translucent.
  • Add the minced garlic and cook for an additional minute until fragrant. Stir in the mushrooms and cook until they are tender.
