Mangolicious Chicken Edamame Salad

The classic chicken edamame salad is a must-try for all chicken lovers. This Asian-influenced salad has a wonderful mixture of flavors that can be welcomed for either lunch or dinner. It can be served with grilled veggies and the leftover can be used to prepare chicken risotto.

Nutritional benefits:

Chicken is by far a great source of protein that is good for muscle growth and development. Mangoes are good in antioxidants, they help in improving digestion and improves skin health. Edamame is good in protein and helps in lowering cholesterol.

Ingredients:

  • 50 grams boneless cooked chicken breast
  • 15 grams edamame
  • 10 grams shredded carrot
  • 10 grams cucumber
  • 15 grams mangoes
  • 10 grams bell pepper
  • 5 grams mint leaves
  • ½ teaspoon lime juice
  • 50 ml chicken broth
  • 1 teaspoon sesame oil
  • 1 jalapeno pepper
  • 1 teaspoon minced ginger
  • 1 teaspoon garlic
  • Salt as per taste

Method:

  • Take a clean bowl and add in the chicken breast along with the veggies and keep aside.
