Walnut and Fruit Energy Bites

Walnut and Fruit Energy Bites are a delightful, no-bake snack that combines the rich flavors of walnuts and a variety of dried fruits. Packed with natural sweetness and wholesome ingredients, these energy bites are perfect for a quick energy boost anytime during the day. Easy to prepare and nutrient-dense, they make for an excellent snack option for both kids and adults.
For a Serving Size of Two:
Ingredients:
- 60 grams walnuts, chopped
- 30 grams pitted and chopped dried dates
- 20 grams chopped dried apricots
- 20 grams raisins
- 20 grams rolled oats
- 10 grams chia seeds
- 10 grams coconut flour
- 1/2 teaspoon cinnamon powder
- A pinch of salt
- 1 tablespoon almond butter (or any nut butter of choice)
Procedure:
- In a large mixing bowl, combine the chopped walnuts, dates, dried apricots, raisins, rolled oats, chia seeds, coconut flour, cinnamon powder, and salt.
- Add almond butter to the mixture. Mix thoroughly until all the ingredients are well combined and sticky. If the mixture feels too dry, you can add a little water or more nut butter to help it bind.
- Using your hands, take small portions of the mixture and roll them into bite-sized balls (about 1 inch in diameter).
- Place the energy bites on a plate lined with parchment paper and refrigerate for at least 30 minutes to firm up. Once set, transfer them to an airtight container for storage.
- Enjoy the energy bites as a quick snack or pre-workout fuel!
