This Mexican style traditional breakfast is way better than eating boiled eggs and sandwiches every day. So much greater than the sum of it’s parts. Crispy fried tortillas meet scrambled eggs, creating that magical crisp-gone-soggy texture that’s irresistibly satisfying. Topped with radishes and cilantro for freshness, cotija for a pop of salt, and avocado for creaminess, this skillet breakfast is more than enough reason to get out of bed.

Avocados are a great source of vitamins as well as riboflavin, niacin, folate, pantothenic acid, magnesium, and potassium. They also provide lutein and omega-3 fatty acids. Tortillas are a great source of fiber and help in weight loss and are a substitute to breads. Egg whites are rich in protein and help in maintain the blood pressure and gaining muscle. This is a great recipe to add healthy ingredients to the diet.
Ingredients:
- 1 teaspoon of oil
- 1 corn tortilla
- 1 jalepeno
- 2-3 garlic cloves
- 10 grams onion
- 1-2 egg white
- Salt as per taste
- 1 teaspoon cilantro leaves
- 10 grams avocado
- 10 grams raddish
- 10 gram salsa
- 1 teaspoon hot sauce

Method:
- Start by taking a clean non- stick skillet and add some oil.
- Add the tortilla and cook for 5 minutes to gain the crispiness.
- Then add in the jalapeño, garlic, and onion.
- Cook till they are softened for about 4 minutes. Lower heat and add the eggs white, season with salt with continuous stirring for it to be scrambled for a minute.
- Pour in the salsa and combine with egg and tortilla for a minute or two.
- Remove from heat and garnish with cilantro leaves, chopped avocado, radishes and hot sauce!
