Spinach and Cottage Cheese Skillet is a nutritious and flavorful dish that combines the goodness of fresh spinach with creamy cottage cheese. For a Serving Size of Two:

Ingredients:

  • 150 grams washed and chopped fresh spinach leaves
  • 150 grams crumbled cottage cheese (paneer)
  • 50 grams finely chopped onion
  • 2 teaspoons minced garlic
  • 2 teaspoons olive oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • Salt (to taste)
  • 1 tablespoon freshly squeezed lemon juice
  • 1/2 teaspoon black pepper
  • Fresh coriander leaves for garnish

Procedure:

  • In a large skillet, heat olive oil over medium heat. Add cumin seeds and let them splutter. Add the chopped onions and minced garlic, and sauté until the onions turn translucent (about 2-3 minutes).
  • Add the chopped spinach to the skillet and cook until it wilts down (about 3-4 minutes). Stir in the turmeric and red chili powder.
  • Gently fold in the crumbled cottage cheese, salt, and black pepper. Mix well and cook for an additional 2-3 minutes until heated through.
  • Remove from heat and add the freshly squeezed lemon juice. Adjust seasoning if needed.
  •  Garnish with fresh coriander leaves and serve hot with whole grain roti or as a side dish.
