Spinach and Cottage Cheese Skillet

Healthy munching options include spinach and cheese skillet with a burst of flavor. The combination of spinach along with eggs and bacon makes it a complete meal.

Spinach is by far the healthiest green vegetable to be added in a dish providing great amounts of Vitamin A, folic acid, nitrates which help reduce blood pressure levels, are good for eye health and fiber helps in constipation. Eggs have the highest biological value for protein and are great for muscle building. They are good in protein and vitamin D and are also filling therefore helping to lose weight.
Ingredients:
- 15 grams potato
- 1 slice bacon
- ½ teaspoon olive oil
- 20 grams spinach
- Salt and ground pepper as per taste
- 1 egg
- 1 teaspoon cheddar cheese

Method –
- Take a washed potato and prick over it with the help of a fork on several spots and microwave it for 4-5 minutes. Then after it has cooled down, chop it into small cubes.
- On the other hand, cook the bacon for some time over a skillet and keep it aside.
- On the same skillet, add in some oil along with potatoes and allow them to cook for about 5-6 minutes.

- in the spinach and season with salt and cook for about 1-2 minutes more.
- Then make space in the center of the skillet and add in the egg and allow it to cook for 3-4 minutes more.
- The next step is to add in the cheese and allow it to cook until it is completely set
- Then chop the bacon and sprinkle over top and sprinkle some pepper and serve!
