Swiss Chard and Lentil Soup

Ingredients:
- 2 cups chopped Swiss chard
- 1 cup cooked lentils
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions :
- Heat olive oil in a large pot over medium heat.
- Add diced onion and minced garlic to the pot and sauté for about 2-3 minutes until they become translucent.
- Add diced carrots and diced celery to the pot and sauté for another 2-3 minutes.
- Stir in the chopped Swiss chard and cooked lentils.
- Pour in the vegetable broth and add dried thyme.
- Bring the soup to a boil, then reduce the heat to low, cover, and let it simmer for about 20-25 minutes until the vegetables are tender.
- Season with salt and pepper to taste.
