For a Serving Size of Two:
Ingredients:
- 150 grams cooked black beans
- 100 grams diced tomatoes
- 80 grams finely chopped onions
- 100 grams diced bell pepper
- 80 grams diced carrot
- 50 grams corn kernels
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon smoked paprika
- 1/2 teaspoon ground black pepper
- 1 teaspoon olive oil
- 500 ml vegetable broth or water
- 1 teaspoon lime juice
- 2 tablespoons fresh cilantro, chopped
- Salt to taste
Procedure:
- Heat olive oil in a large pot over medium heat. Add the chopped onion, bell pepper, and carrot. Sauté for about 5-7 minutes until the vegetables soften.
- Stir in the cumin, chili powder, smoked paprika, and black pepper. Let the spices toast for 1-2 minutes, stirring frequently.
- Add the black beans, diced tomatoes, and corn kernels to the pot. Stir well to combine.
- Pour in the vegetable broth and bring the soup to a boil. Once boiling, reduce the heat and let it simmer for 10-12 minutes.
- Stir in lime juice and adjust the salt to taste. If desired, use an immersion blender to blend part of the soup for a thicker consistency, or leave it chunky for a rustic texture.
- Garnish the soup with chopped fresh cilantro and a squeeze of lime juice. Serve hot.
