Black-Bean Salsa Soup

This Black-Bean Salsa Soup is a hearty, flavorful, and vibrant dish that brings together the richness of black beans with the zing of salsa-inspired ingredients like lime, cilantro, and spices. It combines vegetables, beans, and a kick of spices, making it a deliciously satisfying soup. The balance of flavors and textures makes it an ideal comfort food that’s also nutrient-packed.

For a Serving Size of Two:

Ingredients:

  • 150 grams cooked black beans
  • 100 grams diced tomatoes
  •  80 grams finely chopped onions
  • 100 grams diced bell pepper
  • 80 grams diced carrot
  • 50 grams corn kernels
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon olive oil
  • 500 ml vegetable broth or water
  • 1 teaspoon lime juice
  • 2 tablespoons fresh cilantro, chopped
  • Salt to taste

Procedure:

  • Heat olive oil in a large pot over medium heat. Add the chopped onion, bell pepper, and carrot. Sauté for about 5-7 minutes until the vegetables soften.
  • Stir in the cumin, chili powder, smoked paprika, and black pepper. Let the spices toast for 1-2 minutes, stirring frequently.
  • Add the black beans, diced tomatoes, and corn kernels to the pot. Stir well to combine.
  • Pour in the vegetable broth and bring the soup to a boil. Once boiling, reduce the heat and let it simmer for 10-12 minutes.
  • Stir in lime juice and adjust the salt to taste. If desired, use an immersion blender to blend part of the soup for a thicker consistency, or leave it chunky for a rustic texture.
  • Garnish the soup with chopped fresh cilantro and a squeeze of lime juice. Serve hot.

Nutritional Benefits:

  • Black beans are an excellent source of plant-based protein and fiber, supporting muscle repair and digestion. The addition of vegetables such as bell pepper and carrots contributes vitamins A and C, which support immune function and skin health.
  • The soup is rich in antioxidants, especially from the tomatoes and cilantro, which help fight free radicals and reduce inflammation. The fiber from beans and vegetables also aids in maintaining blood sugar levels, making this soup an excellent option for those managing diabetes.
  • With the addition of lime and cilantro, this soup boosts digestion while providing a refreshing and tangy flavor profile. The combination of cumin and chili powder gives the soup anti-inflammatory properties, supporting overall wellness. This soup is low in fat and calories but high in nutrients, making it a perfect option for those looking for a healthy, satisfying meal.
