Greens and Grapefruit Salad

Greens and grapefruit salad is a colorful, nutrient-rich, and easy to prepare recipe for your immunity and heart. It has the goodness of fresh summer greens, grapefruit, and creamy avocado which are rich in flavors and provide numerous health benefits. This is a healthy, filling summer salad prepared with tangy dressing.
Nutritional benefits:
Green leafy veggies are a good source of vitamin E that protects the cell membrane of every cell. They are also good in vitamin K that is essential for bone strength and density. Avocados are good in healthy fats and loaded with mono-saturated fatty acids. Grapefruits are low in calories and high in antioxidants that protect the immune system.
Ingredients:
- 30 grams fresh greens( kale, spinach)
- 20 grams grapefruit
- 1 teaspoon pine nuts
- 15 grams avocado
- ½ teaspoon olive oil
- ½ lemon and zest
- ½ teaspoon crushed date
- ¼ teaspoon thyme
- Salt and pepper as per taste

Method:
- Wash and clean the greens and finely shred. Meanwhile cut the grapefruit and remove the sections.
- Toast pine nuts in a frying pan for about 4-5 minutes.
- Wash the avocado and scoop out the seed and mash the pulp.
- Take a bowl and add in all the ingredients.
- Take a small bowl to prepare the dressing and add in the olive oil, lemon zest, and juice, thyme, crushed date, salt, and pepper. Mix in all the ingredients well.
- Serve in a clean bowl and drizzle the dressing over the salad.
