Crunchy Egg Bites are a versatile and protein-packed snack or light meal, perfect for a quick bite. These mini frittatas are baked with a mix of crumbled feta cheese, bell peppers, onions, spinach, and fresh herbs, offering a delightful blend of flavors and textures.
For a Serving Size of Two:
Ingredients:
- 2 eggs
- 20 grams crumbled feta cheese
- 30 grams finely chopped bell peppers
- 30 grams finely chopped onions
- 20 finely chopped spinach
- 1 tablespoon chopped fresh herbs
- 1/4 teaspoon paprika
- 1/4 teaspoon black pepper
- Salt to taste
- 1 teaspoon olive oil
Procedure:
- Preheat your oven to 180°C (350°F). Grease a muffin tin with olive oil or use non-stick spray.
In a bowl, whisk the eggs until well beaten.
Add grated cheese, chopped bell peppers, onions, spinach, fresh herbs, paprika, black pepper, and salt. Mix well. - Pour the egg mixture evenly into the muffin tin cups, filling each about 3/4 full.
- Bake in the preheated oven for about 15-20 minutes, or until the egg bites are set and slightly golden on top.
You can test doneness by inserting a toothpick into the center; it should come out clean. - Allow the egg bites to cool in the tin for a few minutes before removing them.
- Serve warm or at room temperature as a crunchy, protein-packed snack or light meal.
