Fluffy Omelette with cashew

A fluffy omelette with vegetables and crispy yet spicy cashew nuts cut into thin strips is a hearty meal, perfect to gorge on for a weekend brunch.

Eggs are a great source of protein. Egg white provides potassium, magnesium and sodium, and egg yolks are rich in vitamins A, B12, D, E and K, and also omega-3 fats. Cashew are low in sugar and rich in fibre, heart-healthy fats, and plant protein. They are considered a good source of copper, magnesium, and manganese.
Ingredients:
- 20 grams onion
- 10 grams mushroom
- 1 stick celery, chopped
- 15 grams capsicum, chopped
- 15 grams spring onions
- 40 grams egg (1 egg)
- 2.5 grams cashew, chopped
- 1-2 sprigs coriander
- ½ teaspoon paprika
- 1 chopped green chilly
- ½ teaspoon ground cumin
- ½ teaspoon coriander powder
- 1 teaspoon oil
- Salt and pepper to taste

Method:
- Heat oil in a pan and saute onion, celery, mushrooms and capsicum for a few minutes.
- Beat eggs with coriander, chillies and seasoning. Pour over vegetables.
- Cook until the omelette on both sides turn golden in colour,
- Remove the omelette from the pan and cut into strips, set aside.
- Place the cashew nuts on the same pan and saute with the remaining seasoning.
- Sprinkle the nuts and spring onions over the omelette and serve warm.
