This Super Kale Salad with Almond Dressing is a colorful, nutrient-packed dish that’s both hearty and refreshing. For a Serving Size of Two:
Ingredients:
- 100 grams kale
- 50 grams baby spinach
- 50 grams thinly sliced red cabbage
- 1 small grated carrot
- 1 small diced cucumber
- 30 grams diced red bell pepper
- 30 grams diced yellow bell pepper
- 10 almonds, chopped
- 1 tablespoon almond butter
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon apple cider vinegar
- 1 teaspoon honey
- 1/2 teaspoon Dijon mustard
- Salt and black pepper to taste
Procedure:
- In a large salad bowl, combine the kale, baby spinach, red cabbage, carrot, cucumber, and bell peppers.
- In a small bowl, whisk together the almond butter, olive oil, lemon juice, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until smooth and well combined.
- Pour the dressing over the salad ingredients and toss thoroughly, making sure all the vegetables are evenly coated.
