Hearty Mixed Vegetable Soup is a wholesome, colorful medley of garden-fresh vegetables simmered to perfection in a lightly seasoned broth. This soup’s rich flavors and chunky texture make it a satisfying meal or a nutritious starter. Ideal for any season, it is easy to prepare and brimming with natural goodness.
For a Serving Size of Two:
Ingredients:
- 150 grams diced carrots
- 150 grams diced zucchini
- 100 grams chopped green beans
- 100 grams diced potatoes
- 100 grams diced tomatoes
- 50 grams chopped onions
- 1 teaspoon minced garlic
- 1 tablespoon olive oil
- 1/2 teaspoon dried thyme
- 1/4 teaspoon crushed black pepper
- 1/2 teaspoon salt, or to taste
- 500 ml vegetable stock or water
- 1 tablespoon chopped fresh parsley, for garnish
Procedure:
- Heat olive oil in a large pot over medium heat. Add minced garlic and chopped onions, sautéing until fragrant and translucent.
- Stir in diced carrots, zucchini, green beans, potatoes, and tomatoes. Sauté for 5 minutes to release their flavors.
- Pour in the vegetable stock and bring to a boil. Reduce the heat, cover, and let it simmer for 15–20 minutes or until all the vegetables are tender.
- Add dried thyme, crushed black pepper, and salt. Stir well and cook for another 2 minutes.
- Ladle the soup into bowls, garnish with chopped fresh parsley, and serve warm with crusty bread or crackers.
