INGREDIENTS
1 cup sprouted moong beans (green gram)
1/2 cup grated fresh coconut
1 ripe mango, diced
1 small cucumber, diced
1 small onion, finely chopped
1 green chili, finely chopped (adjust to taste)
2 tablespoons chopped cilantro (coriander leaves)
Juice of 1 lemon
1/2 teaspoon roasted cumin powder
1/4 teaspoon black salt (kala namak)
Salt to taste
INSTRUCTIONS
- Rinse moong beans and sprout them by soaking overnight, then draining and rinsing daily until small sprouts form in 2-3 days.
- In a mixing bowl, combine sprouted moong beans, grated coconut, diced mango, diced cucumber, chopped onion, green chili, and chopped cilantro.
- Sprinkle some roasted cumin powder, black salt, and regular salt over the salad.
- Then,Squeeze the juice of one lemon over the salad for a zesty kick.
- Gently toss all the ingredients together until well-mixed.
- Refrigerate the salad for about 30 minutes before serving to allow the flavors to meld.
