Khathi Meethi Watermelon Curry is a unique dish that beautifully balances sweet and savory flavors. The juicy watermelon absorbs the spices, creating a refreshing and flavorful curry that’s perfect for summer days. For a Serving Size of Two:

Ingredients:

  • 300 grams diced watermelon
  • 100 grams finely chopped onion
  • 50 grams finely chopped tomato
  • 1 tablespoon ginger-garlic paste
  • 1 green chili, slit
  • 2 teaspoons coconut oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 1 teaspoon jaggery
  • Salt to taste
  • Fresh coriander leaves for garnish

Procedure:

  • Dice the watermelon, ensuring all seeds are removed. Set aside.
  • In a pan, heat the oil over medium heat. Add mustard seeds and cumin seeds. Once they splutter, add the chopped onions and green chili. Sauté until the onions turn translucent.
  • Add the ginger-garlic paste and sauté for a minute. Then, add the chopped tomatoes and cook until they soften.
  • Stir in turmeric powder, coriander powder, red chili powder, and salt. Cook for another 2 minutes.
  • Gently add the diced watermelon to the pan. Stir well to combine with the spices.
  • Cook for about 5-7 minutes until the watermelon softens but still retains some shape.
  • If using jaggery, add it at this stage to balance the flavors.
  • Garnish with freshly chopped coriander leaves and serve hot with steamed rice or roti.
