Kesar Pista Phirni

Kesar Pista Phirni is a rich and creamy Indian dessert made with ground basmati rice, milk, and fragrant saffron. This traditional delicacy is sweetened naturally with mashed banana, adding a unique twist to the classic recipe. The addition of cardamom and chopped pistachios enhances the flavor, making it an indulgent treat. Chilled to perfection, this phirni is perfect for special occasions or as a refreshing dessert on a warm day.
For a Serving Size of Two:
Ingredients:
- 60 grams basmati rice
- 500 ml milk
- 2 tablespoons chopped pistachios
- 1/4 teaspoon saffron strands (soaked in 1 tablespoon warm milk)
- 1 small mashed ripe banana
- 1/4 teaspoon cardamom powder
- 1 teaspoon ghee
Procedure:
- Drain the soaked rice and grind it into a coarse paste using a little water. Heat ghee in a heavy-bottomed pan over medium heat.
- Add the ground rice paste and sauté for 2-3 minutes until it turns slightly aromatic.
- Gradually add the milk to the rice, stirring continuously to avoid lumps. Bring the mixture to a boil, then reduce the heat and let it simmer until the rice is fully cooked and the mixture thickens (about 15-20 minutes).
- Stir in the saffron milk, mashed banana (for sweetness), and cardamom powder. Continue to cook for another 5-7 minutes until the flavors are well combined and the phirni reaches a creamy consistency.
- Stir in half of the chopped pistachios. Cook for an additional 2 minutes, then remove from heat.
- Pour the Kesar Pista Phirni into serving bowls. Garnish with the remaining chopped pistachios and a few saffron strands. Let it cool to room temperature, then refrigerate for a few hours before serving chilled.
