Dahi kanji

Dahi kanji is a dish from orrisa which is made by using curd as the main ingredient. It is a dish which is easy to make and alongside enriched with many nutrients.
Nutritional benefits –
Rice flour is a gluten free flour which is good for consumption of people who have gluten insensitivity. Also it is a fair source of fiber so aids the digestion process as well. Whereas on other hand the yogurt or plain curd is rich in protein and calcium levels. Also curd is said to be as a probiotic which helps in building up of gut friendly bacteria, thereby improving upon your gut health.
Ingredients –
- 20 grams of Rice flour
- 20 grams of curd/yoghurt
- 10 grams of drumsticks
- 1 teaspoon ginger garlic paste
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 spring curry leaves
- 1 red dry chilli
- 1 teaspoon turmeric powder
- 1 teaspoon sauf powder
- 1 cup water
- Salt and pepper as per taste
- 5 grams oil

Method –
- Take a large bowl and mix curd, rice flour and water to make a smooth paste.
- Take sauce pan and heat oil into it.
- Once the oil becomes hot add drumsticks and saute for few minutes.
- Then add turmeric powder, fennel powder, ginger and green chilli paste and saute for another 2- 3 minutes.
- Now reduce the flame to minimum and Pour the curd and flour mixture and keep stirring it to avoid formation of any lumps in the curd.
- Keep stirring and bring it to a boil, then reduce the flame and simmer for another 20 minutes on low flame.
- Meanwhile, to make the tempering take oil in a pan and add heat it.
- Once the oil becomes hot add mustard seeds, cumin seeds, dry red chillies, curry leaves and asafetida.
- Then Pour the tempering over the curd and drumstick mix and simmer on low flame for 2-3 minutes.
- Serve hot with plain rice.
