Sweet Potato Tortilla

A tortilla can be boring with the same old filling, the spinach & sweet potato tortilla is an amazing dish to indulge in as both the main ingredients hold different flavors but give an interestingly unique taste.

Ingredients

  • 1/2 Cup Baby Spinach
  • 1 Tbsp. of Olive Oil
  • 1 Small Onion, sliced
  • 1 Medium Sweet Potato
  • 1 Minced Garlic
  • 1 Egg
  • Black Pepper for seasoning
  • Salt to taste

Method

  • Wash the spinach in boiling water.
  • Heat a pan, and add oil, garlic, and onion. Sautee them well.
  • Then add Potatoes, Spinach, and Salt, and mix them well.
  • Whisk the egg in a bowl, and add eggs. Now add a mix of sweet potatoes and try to separate the spinach clumps.
  • Now brush the pan with some oil, and add sweet potato and egg mixture. Let it cook until it turns golden brown then flip on the other side.
