Brown Rice Buddha Bowl is one bowl wholesome, nutritious and complete meal that is easy to prepare and carry.

Ingredients

  • 4 Tbsp. Brown Rice, raw
  • ¼ Cup Cooked Chickpeas
  • 50 Grams Tofu
  • 4-5 Baby Corns, cut into bite-sized
  • 4-5 Snow Peas
  • 1 Small Grated Carrot
  • ½ Small Bell Pepper, diced
  • 1 small Green Onion, cut diagonally
  • Fresh Cilantro for garnishing
  • 1 Glass Water
  • Salt to taste
  • 1 Tbsp. Lime Juice
  • 1 Tsp. Olive Oil
  • 1 Tsp. Sesame Seeds
  • 1 Tbsp. dried Thai Basil
  • 1 Tsp. Chilli Flax Powder

Method

  • Cook brown rice in a pressure cooker.
  • Prepare to dress – Lime Juice, Olive Oil, Thai Basil, and Chilli Flax Powder- put into a bowl and whisk them all together well.
  • Dry roast sesame seeds until light brown.
  • Then in the same skillet until they turn bright green.
  • In a bowl, arrange Snow peas, chickpeas, tofu, baby corn, carrots, and green bell peppers over brown rice. Drizzle dressing over the bowl and sprinkle some sesame seeds. Garnish with cilantro and green onion. Toss well to mix all the ingredients.
  • Budha Bowl is ready to be served.
