Baked potato mushroom kebabs

Baked potato mushroom kebabs are an amazing appetizer to make way for your house parties or tea time snacking. The best part is that these are baked and not deep fried which makes them a super healthy choice.

Potato is rich in potassium, vitamin C and Vitamin B6. It is a starchy vegetable which keeps you fuller for a longer period of time thereby curbs satiety. Mushrooms are rich in potassium, protein, Vitamin K and Vitamin C. Potassium plays a very important role in boosting heart health and controlling high blood pressure.
Ingredients
- 20 grams potato, boiled and mashed
- 20 grams onion, finely chopped
- 1 green chillies, finely chopped
- 20 grams green capsicum, finely chopped
- 20 grams mushrooms, finely chopped
- 1 teaspoon olive oil for greasing the baking sheet and breads
- ¼ teaspoon cumin powder
- Red chilli powder, to taste
- Salt, to taste

Method
- Pre-heat the oven to 200 C and grease a baking sheet with olive oil.
- Combine the mashed potatoes, bell peppers, mushrooms, onions, green chillies, cumin powder and salt.
- Mix and stir to combine all the ingredients well.
- Now make small kebabs of your desired shape out of mashed potato mixture.
- Repeat the same process with the remaining mixture to make kebabs.
- To get the crusty top, apply oil and place it on the greased baking sheet.
- Repeat with the remaining and place them on a greased baking sheet. Put in the preheated oven and bake for about 15 to 20 minutes until the crust turns golden brown in colour.
- Serve immediately
