Apple Cinnamon Stew

Apple cinnamon stew is a combination of apples, raisins, and cinnamon. It makes for a comforting and light desert. You can have it with greek yogurt.

For a Serving Size of Two:

Ingredients

  • 3 medium apples, peeled, cored, and chopped into bite-sized pieces
  • 1 cup water
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon chia seeds
  • 1 teaspoon pure vanilla extract

Procedure:

  • Peel, core, and chop the apples into bite-sized pieces.
  • In a medium-sized pot, add the chopped apples and water (or unsweetened apple juice).
  • Bring to a simmer over medium heat.
  • Once the mixture starts to simmer, reduce the heat to low.
  • Add the ground cinnamon, nutmeg, and cloves.
  • Stir well to ensure the spices are evenly distributed.
  • Cover the pot and let the apples cook on low heat for about 15-20 minutes, stirring occasionally, until the apples are tender and have absorbed the spices.
  • Stir in the fresh lemon juice and chia seeds.
  • Continue to cook for another 5 minutes to allow the seeds to thicken the stew slightly and add extra nutrition.
  • Remove the pot from heat and stir in the pure vanilla extract. Serve the apple cinnamon stew warm, topped with a sprinkle of extra cinnamon if desired.
