Instant Pot Tomato Rice

Instant Pot Tomato Rice is a quick and flavorful one-pot dish, combining basmati rice with tangy tomatoes, aromatic spices, and a hint of heat. It’s perfect for a tasty, balanced meal or as a side.

For a Serving Size of Two:

Ingredients:

  • 1 cup (200 grams) basmati rice, rinsed and drained
  • 1 medium onion (about 100 grams), finely chopped
  • 1 medium tomato (about 100 grams), chopped
  • 1/4 cup tomato puree (60 ml)
  • 1 green chili, chopped (optional)
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1 teaspoon garam masala
  • 1 tablespoon olive oil or ghee
  • 1 1/2 cups (360 ml) water or vegetable broth
  • Salt to taste
  • Fresh coriander, chopped, for garnish

Procedure:

  • Set the Instant Pot to “Sauté” mode, add olive oil or ghee, and let it heat up. Add cumin seeds and mustard seeds, letting them splutter.
  • Add the chopped onion and sauté until golden brown, about 3-4 minutes. Add ginger-garlic paste and green chili, and cook for 1 minute until fragrant.
  • Stir in the chopped tomato, tomato puree, turmeric powder, and garam masala, cooking until the tomatoes soften, about 3-4 minutes.
  • Add the rinsed rice and stir to coat it well with the spices and tomato mixture.
  • Pour in the water or vegetable broth and add salt to taste. Mix everything well and secure the lid.
  • Set the Instant Pot to “Pressure Cook” on high for 5 minutes. After cooking, let the pressure release naturally for 10 minutes, then carefully do a quick release if needed.
  • Fluff the rice gently with a fork, garnish with fresh coriander, and serve hot.
