For a Serving Size of Two:

Ingredients:

  • 200 grams cubed sweet potatoes
  • 150 grams sliced carrots
  • 2 teaspoons olive oil
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon grated fresh ginger
  • 1/4 teaspoon cumin powder
  • 1/4 teaspoon black pepper
  • Salt to taste
  • Fresh coriander for garnish

Procedure:

  • Preheat your oven to 200°C (400°F).
  • In a bowl, toss the sweet potatoes and carrots with olive oil, turmeric, ginger, cumin, pepper, and salt until well-coated.
  • Spread the seasoned veggies on a baking tray in a single layer.
