Cool Mint Cucumber Soup

Cool Mint Cucumber Soup is a refreshing and light soup, perfect for hot days. The coolness of cucumber, combined with the aromatic freshness of mint and a hint of yogurt tang, makes this soup a delightful, soothing appetizer. For a Serving Size of Two:

Ingredients:

  1. 200 grams peeled and chopped cucumber
  2. 100 grams plain yogurt
  3. 100 ml chilled water
  4. 10 fresh mint leaves
  5. 1 tablespoon fresh coriander leaves
  6. 1/2 teaspoon black pepper powder
  7. 1/2 teaspoon roasted cumin powder
  8. 1/2 teaspoon lemon juice
  9. Salt to taste

Procedure:

  • In a blender, add chopped cucumber, yogurt, chilled water, mint leaves, coriander leaves, black pepper, roasted cumin powder, lemon juice, and salt.
  • Blend until the mixture is smooth and creamy.
  • Pour the soup into bowls or glasses, garnish with a few extra mint leaves, and refrigerate for at least 15-20 minutes. Serve chilled.
