Cool Mint Cucumber Soup is a refreshing and light soup, perfect for hot days. The coolness of cucumber, combined with the aromatic freshness of mint and a hint of yogurt tang, makes this soup a delightful, soothing appetizer. It’s a creamy, mildly spiced soup with a hint of lemon, ideal for a summer snack or a light meal starter.
For a Serving Size of Two:
Ingredients:
- 200 grams peeled and chopped cucumber
- 100 grams plain yogurt
- 100 ml chilled water
- 10 fresh mint leaves
- 1 tablespoon fresh coriander leaves
- 1/2 teaspoon black pepper powder
- 1/2 teaspoon roasted cumin powder
- 1/2 teaspoon lemon juice
- Salt to taste
Procedure:
- In a blender, add chopped cucumber, yogurt, chilled water, mint leaves, coriander leaves, black pepper, roasted cumin powder, lemon juice, and salt.
- Blend until the mixture is smooth and creamy.
- Pour the soup into bowls or glasses, garnish with a few extra mint leaves, and refrigerate for at least 15-20 minutes. Serve chilled.
