Silky Corn and Chicken Soup

The easy to make healthy chicken and corn soup is packed with the goodness of veggies and loaded with proteins and healthy beans.

Nutritional benefits: Chicken breast is a great source of protein , rich in phosphorous and Vitamin D in chicken helps in calcium absorption. Being a good source of protein it also helps in marinating weights.

Ingredients:

  • 10 grams onion
  • 10 grams red bell pepper
  • 10 grams carrot
  • 5 grams garlic
  • 20 grams boneless skinless chicken breast
  • 10 grams corn
  • 80 ml chicken broth
  • 5 grams olive oil
  • 1 teaspoon cumin powder
  • ½ teaspoon mustard seeds
  • Salt, black pepper and chilli powder, oregano according to taste
  • Parsley for garnishing

Method:

  • Take a large skillet, drizzle some olive oil and add mustard seeds, chopped onion, chopped bell pepper, minced garlic and chopped carrots.
  • Sautee the veggies for 5-7 minutes.
  • Then add the chicken breast, boiled corns, chicken broth, herbs and spices. Let it cook for 10 minutes.
  • Pull out the chicken breast when they are cooked.
  • Add the shredded chicken back in the soup and serve hot.
  • Enjoy by garnishing with fresh parsley!
