Nutty Oats Risotto

Nutty oats risotto is one recipe that is high on taste as well as the nutrition. Made with goodness of nuts this recipe is best to include in your winter food guide.

Oats being a great source of fiber is good for constipation and helps to lower blood sugar levels. Almonds are good source of dietary fiber which helps in weight loss and further reduces the risk of diabetes and cardiovascular diseases.

Ingredients:

  • 1 teaspoon – extra-virgin olive oil
  • 20 grams of onions; chopped
  • 2-3 garlic cloves, minced
  • 40 grams of mushrooms, thickly sliced
  • ¼ teaspoon of freshly ground pepper
  • 20 grams oats
  • 5 grams almonds (chopped)
  • 5 grams walnuts (chopped)
  • 1 tablespoon lemon juice
  • 2 cups vegetable broth (mixed with 2 cups of hot water)

Method

  • Firstly, sautee the mushrooms in the olive oil, in a separate pan, add salt and pepper. Set aside.
  • Then, add the olive oil to a nonstick pan on medium-low heat then add garlic then add chopped onions. Sauté until soft.
  • Now add lemon juice and then add oats. Stir to combine thoroughly.
  • Add 4 cups of vegetable broth and stir it so that it will be absorbed.
  • Now add the mushrooms followed by chopped almonds & walnuts and cook for a few minutes.
  • Transfer to a bowl and season it with salt and pepper.
  • Serve hot.
