Nutty Oats Risotto

Nutty Oats Risotto offers a creamy, savory twist on traditional risotto by using oats as the base. This dish features a delightful blend of sautéed onions, garlic, and mushrooms, enriched with the crunch of almonds and walnuts. The addition of lemon juice provides a zesty touch, making it a flavourful and hearty option for a satisfying meal.
For a Serving Size of Two:
Ingredients:
- 60 grams oats
- 30 grams onions, chopped
- 60 grams mushrooms, thickly sliced
- 10 grams almonds, chopped
- 10 grams walnuts, chopped
- 4-6 garlic cloves, minced
- ½ teaspoon freshly ground pepper
- 1.5 tablespoons lemon juice
- 4 cups vegetable broth (mixed with 4 cups of hot water)
- 1.5 teaspoons extra-virgin olive oil
Procedure:
- Heat the olive oil in a pan over medium heat.
- Add the chopped onions and cook until they become translucent.
- Add the minced garlic and cook for an additional minute until fragrant. Stir in the mushrooms and cook until they are tender.
- Add the oats to the pan and cook for a few minutes, stirring occasionally.
- Gradually add the vegetable broth, a little at a time, allowing the oats to absorb the liquid as you stir.
- Continue to add broth and cook until the oats are tender and have a creamy consistency. This should take about 10-15 minutes.
- Stir in the chopped almonds and walnuts. Add freshly ground pepper to taste.
- Mix in the lemon juice and adjust seasoning as needed.
- Spoon the risotto into bowls and serve hot.
