No Bake Mini Santa Bites

No Bake Mini Santa Bites are a fun and festive holiday treat, made with juicy strawberries, creamy cottage cheese, and a touch of vanilla. With a playful Santa hat and snowy coconut garnish, these adorable bites are a great way to enjoy a healthy and tasty snack that brings a touch of holiday cheer.

For a Serving Size of Two:

Ingredients:

  • 8 strawberries
  • 50 grams cottage cheese
  • 1/2 teaspoon vanilla extract
  • 2-3 fresh blueberries
  • 10-12 sunflower seeds or crushed almonds
  • 1 teaspoon shredded coconut

Procedure:

  • Wash and hull the strawberries. Cut a small section from the bottom of each strawberry so they can stand upright, and slice the top off to create a “hat.”
  • In a small bowl, mix the softened cottage cheese with vanilla extract until smooth and creamy.
  • Using a small spoon or piping bag, add a dollop of the cheese mixture on top of each strawberry.
  • Place the “hat” (the sliced top of the strawberry) back on top of the cheese to form Santa’s hat.
  • Use fresh blueberries for the eyes. Arrange sunflower seeds or crushed almonds around the bottom of the strawberry to mimic Santa’s beard.
  • Sprinkle shredded coconut around the base of the strawberry for a snowy effect.
  • Chill the Santa Bites in the fridge for 10-15 minutes to set before serving.
