Ragi Bites with Creamy Cucumber Dip

Ragi, the super grain is well known as Finger –Millet and Nachni in North India. It grows even in high altitudes and can withstand harsh weather conditions, making it perfectly suited for the Indian climatic conditions.

Ragi is also known to be the pinnacle of food grains. Since this cereal is gluten-free and highly suitable for those people suffering from diabetes, and gluten or lactose intolerance.  Ragi benefits for diabetes patients are rooted in its chemical nature. It is a perfect cereal to intact the goodness of health and weight loss loaded with minerals, fibre and very less unsaturated fat.

Nutritional Benefits – Ragi, this wholesome grain, is having extensive benefits such as it is rich in minerals such as calcium. It is also rich in phosphorus, potassium and iron. Since, calcium is, of course, an important component in maintaining bone density and health, ragi works as a great substitute in the daily diet for individuals having bone health issues. Along with this, ragi also helps in weight loss and has high fibre content. Its antioxidant properties work against the skin ageing problems thereby giving you a young and steady face.

Moreover, this grain’s seed coat is plentiful rich in polyphenols and dietary fibres which give it a low glycemic index. This basically helps to reduce the food cravings and slows down digestive absorption and absorption of starch, thus keeping blood sugar within the safe range.

Ragi Bites Ingredients:

  • 10 Gram Ragi flour
  • 10 Gram Oats flour
  • 10 Gram Wheat Flour
  • 1 Green chilli paste
  • 3-4 cloves Garlic paste
  • 1 tsp. Olive oil
  • Salt to taste

Preparation Time: 25-30 minutes

Calories: 150- 152 kcal

Method:

  1. Combine all the flours in a deep bowl, mix well and knead into a dough using water as required.
  2. Roll out a portion of the dough into a circle without using any flour for rolling.
  3. Prick them all over using a fork at regular intervals and cut into small square pieces using a sharp knife. You will get approx. 5-6 pieces.
  4. Arrange them on a greased baking tray and bake in a pre-heated oven at 180°c (360°f) for 25 to 30 minutes, till they turn crisp from both the sides while turning them once after 12 minutes. Keep aside to cool slightly.
  5. Serve with cucumber dip.

Cucumbers dip Ingredients:

  • 20 grams -thinly grated cucumber

  • 1 tablespoon fresh hung curd

  • 1 tsp garlic paste

  • 1 tsp mint paste

  • Salt to taste

Preparation Time: 10 minutes

Calories: 11.4 kcal

Method:

  • Squeeze the grated cucumber and remove extra water

  • Blend the cucumber in a mixer till smooth.

  • Place the cucumbers in a bowl add the rest all ingredients and mix well.

  • Refrigerate for at least 1 hour.

  • Serve chilled with Ragi bites.

Pinaca is a traditional Goan sweet dish. This dish is made by Goan rice, jaggery and plenty of

coconut. Pinaca are usually made into sweet balls and can be consumed all year long. This simple

sweet dish is easy to make yet high in nutrient value.

Nutritional value

Pinaca balls are high on nutrition as they contain jaggery, which is good source of iron, naturally

occurring B vitamins, minerals like phosphorus, zinc, calcium and copper. Coconut contains lauric

acid, which helps to increases good HDL cholesterol, also cytokinin’s present in coconut have showed anti-ageing, anti-carcinogenic effects.

Ingredients

40 grams Goan rice flour

¼ fresh coconut

1 tablespoon Jaggery

1 tablespoon desiccated grated coconut

Pinch of cardamom powder

Nuts (optional)

Coconut water (optional)

Calories- 217 kcal

Carbs- 28.6 grams

Protein- 1.9 grams

Fats- 10.3 grams

Course- Dessert

Method

First take the Goan rice and dry roast it on a tawa or pan.

Cool the rice and later powder them in a grinder

Now take jaggery, crush it and grind it along with coconut, also add pinch of cardamom

powder. Grind them on a round grinding stone if possible, otherwise just use a grinder.

Take this mixture out and keep adding flour, a little at a time and just mix it well with your

hands. Add coconut water if needed.

Mix well and form small balls out of this mixture.

Nuts can also be added to the mixture. (optional)

Aloe vera juice

Amla scientifically called Phyllanthus emblica or more commonly Indian gooseberry. It can be put to innumerable uses like in culinary, shampoos, hair oils and in ayurvedic medicines. This amla churna or powder can be put to many uses like it can be taken with water for wonderful results, make amla tea using this powder, add it to curries, or consume with lemon and honey.

Nutritional Values

200 grams amla

Methods

After through washing, cut and dry the amlas in direct sunlight for few days till they are completely dry.

After the juice is evaporated completely, transfer the dried amla in a grinder and blend it coarsely.

Sift the amla powder through a sieve to achieve smooth powder.

Voila! Your home made amla powder is ready.

Store this powder in an airtight container.

Use every day as needed.
