Healthy Burrito Bowl

Healthy Burrito Bowl is a simple yet delicious dish which made with the goodness of vegetables and rice. It is a perfect dish to be tried upon and relish the bundles of nutrition along with amazing taste.

Nutritional Benefits:
Rice serves as the instant source of energy. Whereas tomatoes are great source of antioxidant lycopene which reduces the risk of cancer and heart diseases. It is also rich in vitamin C, potassium and Folate. Broccoli is also rich in vitamin C, iron and folate.

Ingredients:
For citrus vinaigrette-

  • Fresh coriander leaves
  • ½ teaspoon lemon juice
  • 1-2 garlic clove
  • Salt and pepper as per taste

For burrito bowl-

  • 20 grams cooked brown rice
  • 20 grams onion
  • 20 grams tomatoes
  • 20 grams broccoli
  • 2-3 green chillies
  • 10 grams green peas
  • Salt as per taste
  • 1 teaspoon olive oil

Method:

  • Firstly to make cilantro – lime vinaigrette Mix all the ingredients thoroughly in a blender and keep aside.
  • Then add rice along with water and bring it to boil until the rice absorbs the water and becomes soft.
  • Meanwhile heat some oil in sauce pan and add finely chopped green chilies and onions.
  • Allow them to cook, then add rest of the vegetables and allow them to cook for few more minutes.
  • Add the spices and mix well.
  • Now assemble the bowl by distributing same amount of rice and vegetables. Spread the cilantro-lime vinaigrette thoroughly and enjoy.
