Crunchy Salad

Crunchy Salad is an amazing salad made with green leafy vegetables and walnuts with spicy pepper and lime dressing. This recipe which is inclusive of colorful vegetables to fill you up with ample fiber and other nutrients.

Nutritional Benefits:
Tomatoes are great source of antioxidant lycopene which reduces the risk of cancer and heart diseases. Sprouts are high in fiber, vitamins, minerals and antioxidants. Spinach is an excellent source of Vitamin A, Vitamin K, Vitamin C and folate. It is also a fair source of manganese, magnesium, iron and vitamin B2. Walnuts are rich in antioxidants and omega-3 levels. They have good amount of fiber as well and add high nutritional benefits to the dish.

Ingredients:

  • 20 grams Lettuce
  • 20 grams broccoli
  • 20 grams cauliflower
  • 10 grams kale
  • 20 grams tomatoes
  • 10 grams baby spinach
  • 20 grams spring onions
  • 5 grams roasted walnuts
  • 1 teaspoon lemon juice
  • ½ teaspoon red chili pepper
  • 2 cloves of minced garlic
  • Salt and pepper as per taste

Method:

  • Wash baby spinach and lettuce leaves and keep aside.
  • Take the food processor and prepare the dressing by blending lemon juice, garlic and red chili pepper.
  • With the help of chopper, chop onion and tomatoes, broccoli, cauliflower and kale.
  • Now mix all the ingredients including baby spinach, lettuce, chopped veggies, roasted walnuts together in a salad bowl and sprinkle the dressing prepared over it.
  • Toss it well by adding salt and pepper as per taste.
  • Serve and enjoy.
