Spinach and Chickpea Blend

The spinach and chickpea blend is a balance of bold flavours. This healthy rich and nourishing blend is vegetarian and packed with nutrients. It is perfect for those main courses (lunches and dinners) to fill in your empty stomach with a punch of nutrients.

Nutritional benefits:

Chickpeas may offer a variety of health benefits, such as improving digestion, reducing the risk of diseases, and helping in weight management. They are also high in protein that is an excellent replacement for meat. Spinach is one of the healthiest green vegetables to be added to a dish providing great amounts of Vitamin A, folic acid, nitrates which help reduce blood pressure levels, are good for eye health and fibre helps in constipation.

Ingredients:

  • 1 teaspoon olive oil
  • 1-2 garlic cloves
  • 1 green chilli
  • 20 grams spinach
  • 10 grams chickpeas
  • Salt, oregano, and black pepper as per taste
  • 100ml vegetable stock
  • ½ teaspoon of lemon juice

Method:

  • In a soup pot add in some olive oil to sauté the onion, green chilli, and garlic for 2-3 minutes.
  • Then add in boiled spinach, boiled chickpeas. Sauté for some time and add in salt, oregano, and pepper by stirring it frequently.
  • Allow the chickpeas to become crisp, once they are brown, mash them a bit to thicken the soup, and cook for 10 minutes.
  • Then add in the vegetable stock, and simmer for 25- 30 minutes.
  • Then add in the lemon juice and mix in the soup.
  • Pour the prepared soup in a bowl and garnish with lime if required, and serve.
