Ingredients:

  • For the Chicken:
    • 250 grams chicken breast, cut into bite-sized pieces
    • 2 tbsp honey
    • 2 cloves garlic, minced
    • 1 tbsp soy sauce (low sodium)
    • 1 tbsp olive oil
    • 1/2 tsp black pepper
    • 1/4 tsp salt (adjust to taste)
    • 1 tsp lemon juice

    For the Veggies:

    • 100 grams broccoli florets
    • 100 grams bell peppers, sliced
    • 50 grams carrots, sliced
    • 1 tbsp olive oil
    • 1/2 tsp garlic powder
    • Salt and pepper to taste

Procedure:

  1. Marinate the Chicken: In a bowl, mix honey, minced garlic, soy sauce, black pepper, salt, and lemon juice. Add the chicken pieces, coating them well, and marinate for at least 15-20 minutes.
  2. Cook the Veggies: Heat 1 tbsp olive oil in a pan over medium heat. Add the broccoli, bell peppers, and carrots. Sprinkle with garlic powder, salt, and pepper. Sauté for 5-7 minutes until slightly tender but still crisp. Remove and set aside.
  3. Cook the Chicken: In the same pan, add 1 tbsp olive oil and cook the marinated chicken on medium heat for 5-7 minutes, flipping halfway through, until the chicken is golden and cooked through. If needed, add a splash of water to help the sauce coat the chicken.
  4. Combine and Serve: Once the chicken is cooked, toss the sautéed veggies with the chicken. Serve hot, garnished with sesame seeds or cilantro if desired.
