Method

  • In a bowl, add avocado, tomato, jalapeno, cilantro, and lime juice. Toss them well.
  • In another bowl, whisk the egg well and add salt.
  • Heat a pan, and add butter, onion, bell pepper, and some salt. Sautee for 4-5 minutes. Transfer the vegetable to a plate.
  • In the same pan add whisked eggs, and stir often until the proper scramble is cooked. Then add cheese and stir while it melts.
  • Warm the tortillas. Place vegetables, scrambled eggs, and avocado mixture on tortillas and they are ready to be served.
