Egg Fajitas

Egg Fajitas are a flavorful and quick meal that combines scrambled eggs with sautéed bell peppers, onions, and carrots, seasoned with aromatic spices. This dish is perfect for breakfast, brunch, or a light dinner, and can be served with tortillas or enjoyed on its own.
For a Serving Size of Two:
Ingredients:
- 3 large eggs
- 50 grams sliced bell peppers
- 50 grams sliced onions
- 25 grams finely chopped carrots
- 1 teaspoon olive oil
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon chili powder
- Salt and black pepper, to taste
- Fresh cilantro or parsley for garnish
Procedure:
- Heat olive oil in a skillet over medium heat. Add the vegetables. Sauté for about 5 minutes until the veggies are tender and slightly caramelized.
- Add ground cumin, paprika, garlic powder, chili powder, salt, and black pepper to the veggies. Stir well to coat the veggies with the spices.
- Beat the eggs in a bowl and pour them over the sautéed veggies in the skillet. Cook, stirring gently, until the eggs are fully cooked and scrambled.
- Garnish with fresh cilantro or parsley if desired. Serve hot with tortillas or on its own.
