Healthy rice pudding recipe is the perfect, lightened up version of the creamy rice pudding recipe you grew up loving. It’s vegan, gluten-free, and refined sugar free and is hands down the perfect hearty dessert

Ingredients
- 30 grams uncooked brown rice
- 30 ml low-fat milk
- 2.5 grams coconut sugar
- 50 grams egg, beaten
- 5 grams raisins
- 1 teaspoon butter
- Salt to taste

Method:
- Combine water and rice over high heat in a saucepan and bring to a boil. Reduce heat to medium-low, cover, and simmer until tender.
- Combine cooked rice, little milk, coconut sugar, and salt in a clean saucepan. Cook over medium heat until thick and creamy. Stir in remaining milk, beaten egg, and raisins.
- Cook 2 minutes more, stirring constantly. Remove from heat and stir in butter.
- Serve warm.
