Healthy rice Pudding

Healthy rice pudding recipe is the perfect, lightened up version of the creamy rice pudding recipe you grew up loving. It’s vegan, gluten-free, and refined sugar free and is hands down the perfect hearty dessert

Ingredients

  • 30 grams uncooked brown rice
  • 30 ml low-fat milk
  • 2.5 grams coconut sugar
  • 50 grams egg, beaten
  • 5 grams raisins
  • 1 teaspoon butter
  • Salt to taste

Method:

  • Combine water and rice over high heat in a saucepan and bring to a boil. Reduce heat to medium-low, cover, and simmer until tender.
  • Combine cooked rice, little milk, coconut sugar, and salt in a clean saucepan. Cook over medium heat until thick and creamy. Stir in remaining milk, beaten egg, and raisins.
  • Cook 2 minutes more, stirring constantly. Remove from heat and stir in butter.
  • Serve warm.
