Earthy Cauliflower with Roasted Cashew

Cauliflower with nutty cashews and garlic lime dressing is very easy to prepare yet impressive. It is a great snack for evenings and is loved by kids.
Nutritional benefits:
Cauliflower is good in fiber, B vitamins, antioxidants, and phytonutrients that can protect against cancer. The fiber in it helps with digestion and constipation. Garlic has antimicrobial properties and helps to get rid of the common cold and has also been shown to improve cholesterol levels.
Ingredients:
- 25 grams cauliflower
- 1 lime (zest and juice only
- 1-2 garlic cloves
- ½ teaspoon olive oil
- 5 grams cashew nuts
- Salt and pepper as per taste

Method:
- 1. First of all, preheat the oven at around 180º C
- 2. On the other hand, blanch some cauliflower in a large saucepan in water for about 3-4 minutes.
- 3. Drain the water and dry the cauliflower for a few minutes.
- 4. Take a small bowl and mix some lime juice, minced garlic, oil, and lime juice.
- 5. Place the cauliflower along with cashew in a roasting tin and pour the dressing mixture and mix properly. Season the mixture with salt and pepper.
- 6. Let the cauliflower and nuts roast for 10- 15 minutes or until golden brown.
- 7. Serve by garnishing with some parsley
