Curried sweet potato and peanut soup

The winter ingredients sweet potato and peanut brings a lot of recipes to try on. The versatile flavour of peanut gives the dish a deep crunchy taste and the satisfying texture of the soup along with its amazing nutritional composition is one of a kind. All the good things are served right in this bowl of super nutritious and comforting soup.

Nutritional benefits: Sweet potatoes are very nutritious and has good amount of fiber, antioxidants beneficial for constipation and gut health. They are rich in beta carotene helps in eye health. Peanuts on the other side are nutrient rich and a great source of protein, phosphorous and potassium.

Ingredients:

  • 1 teaspoon of olive oil
  • 10 grams onion
  • 5 grams garlic
  • 5 grams ginger
  • 1 teaspoon red curry paste (optional)
  • 10 grams sweet potato
  • Water as per required
  • 5 ml coconut milk
  • 5 grams unsalted roasted peanuts
  • 1 teaspoon salt
  • 1 teaspoon ground pepper
  • 1 teaspoon red chilli powder
  • 1 teaspoon lime juice
  • 1 tablespoon chopped coriander leaves
  • 5 grams roasted pumpkin seeds

Method:

  • Heat some oil in a skillet and sauté onions for about 3-4 minutes until they turn golden brown.
  • Add in the garlic, ginger, red curry paste and the spices. Sauté them for about a minute. Add in the chopped sweet potatoes and some water to boil. Let it boil for 10-15 minutes or until they turn soft.
  • After the soup is boiled, let it cool down and transfer it to the blender.
  • Add in the peanuts and coconut milk and blend it along the soup.
  • Serve it in a bowl and garnish with coriander leaves, pumpkin seeds, lemon juice and peanut chunks.
