Citrus Relish with Mint

Citrus Relish with mint is amazing with a blast of citrus fruits for you. This dish will give you rejuvenated feeling and a soothing effect by being your skin brightener and nourisher as well.

Ingredients:

  • 30 grams grapefruit
  • 40 grams orange
  • 2 lemons
  • ½ teaspoon olive oil
  • 1 teaspoon kosher salt
  • 1 tablespoon parsley leaves
  • 1 teaspoon coconut sugar

Method:

  • Firstly, slice half of a pink grapefruit, navel orange and 1 lemon crosswise into paper-thin rounds and remove seeds. Now, toss in a medium bowl with sugar,1 olive oil & 1 teaspoon kosher salt.
  • Secondly, roast on a parchment- lined baking sheet in a 350-degree oven until golden or brown in spots and crisp,20-30 minutes and let it cool.
  • Now, cut all peels and white pith from the remaining grapefruit, orange and lemons and cut along sides of membranes to release segments into a bowl followed by discarding the membranes.
  • Lastly, tear the roasted citrus into pieces and toss with segments by breaking up larger segments and stir in ¼ cup parsley leaves.
